I eat the tomato, lettuce. pickle and onion. In fact I sometimes get grilled onions. The tomato and onion have some carbs but are pretty low unless a person start eating whole onions or tomatoes.

Today wife and I went to the Mall Deli and Wednesdays three sub sandwiches for the price or two. About a half pound of deli meat on each sub. We have them serve us all three for the two of us. We get them without bread and instead of the potato chips that come with them we have them substitute a boiled egg with each sandwich. I eat one and a half sandwiches with one egg and wife eats one. We take the other meat home. Comes with lettuce, tomato and onion on the side. I eat all of mine and some of hers. We take the rest home. Tonight I had the remaining meat with the rest of the tomato and lettuce and had it as a salad side to go along with the smoked brisket we had and I ate the last two boiled eggs.

So we eat some veggies. We just don't eat a lot of them and we avoid the starchy vegetables that are high in carbs because they spike my blood sugar which is not a good idea for a diabetic. For my wife and I vegetables are more of a garnish rather than a main dish. We eat meat for nutrition and the vegetables for a little variety and taste. Sometimes we just do without the vegetables completely. We don't feel we really need them nutrition wise. But we are not particularly against them. As a diabetic that controls my diabetes completely by diet the high starch (high carb) vegetables just need to stay off my diet. 

I was told by the medical community diabetes type II is a progressive disease that never gets better. You can only control the rate of decline. I have proven to myself that is complete BS. Eating a proper diet CAN reverse the disease. It CAN get better. Much MUCH better in my case. Life changing better. I may not have cured my diabetes disease but I most definitely have reversed its decline and have improved many aspects of my health because of it.
