Virginia | They can be vacuum packed and froze if water blanched for a few minutes depending on size.
In my climate storing where they were grown, with appropriate mulch/covering works really well if nematodes or other soil insects aren’t a problem and they will stay in excellent condition until late winter/early spring when the soil temps start to increase. At that point they can be dug and stored in a fridge for a few more months or froze/processed.
There are some storage type carrot varieties like bolero that have some natural long term keeping qualities also. | |
