Western Oregon | Anyone render venison fat for tallow? I trim all the fat off. Venison fat is gamey but tallow is not. I use that in my deer sausage sticks. I also make them and loose sausage with 1/4 ground pork. Really good with ground smoked pork added too. I also use venison tallow in my pemmican. I like to add 50% buffalo with elk to make sausage, summer sausage and "beef" stick....James
