I have went through a few processing plants over the years on various tours. When they were bagging up boneless processed "hams" it did not look anything like a ham. Looked like some pink slime in a plastic bag. But when it solidified it looked ok. The place made good meat and was clean. Just modern food manufacturing.

I would guess that roast beef would look similar when it was created.
