Butcher not skimming. This is exactly why I dont like selling less than 1/2. A 1/4 that fits in a couple 50 pound seed sacks just doesn't seem like much meat for what these guys are paying for it these days. Only sell 1/4's to immediate family that have been doing it for years so they know what to expect.
