That's because honey is majority fructose which does not glycate your blood cells, it goes to your liver and is processed into fat and released into the blood as triglycerides.


But if it's been pasturized, it loses it's net hypoglycemic effect. There is a lot more to how our bodies utilize different nutrients than we currently understand.
