SE Wisconsin | I think you are about right. smaller animal though for sure.
I just did a large 1520 lb angus steer..... got 230 lb hang weight on quarter. only gave 115 lbs of take home beef. that seems short to me. Butcher told me steer was a little fat and that is where waste is. I've also had 225 lb hang weight quarters take home 125 lbs of beef. So, I don't know. each animal is a little different.
