Pittsburg, Kansas | We are pretty much gluten free by just cutting out all high carb foods from our diet.
That is not to say we don't get some once in a great while. Like half a piece of wedding cake once every 5 years or something. Some breading once in a while on a piece of chicken we decide to eat rather than avoid. But it is rare. I don't know that either of us are particularly gluten intolerant. My daughter is though. It bothers her a lot if she has some.
My understanding of gluten is that it effects everyone negatively to a degree by loosening the tight junctions in the gut allowing more to pass into the bloodstream, not all of which may be beneficial. It is just that most people are pretty tolerant, some people less so and a few that are not at all tolerant.
I would put us in the fairly tolerant category with my daughter in the less tolerant. | |
