Any reason for aluminum? The reason I ask is because we have had excellent service out of Ballardo steel cookware, and we have gone through many.


Aluminum heats up quickly and spreads the heat more evenly sooner than stainless steel. It is also lighter than steel which helps quite a bit on the larger pans and pots. That's the reason you find aluminum sandwiched between two layers of stainless steel on premium cookware.
