Subject: Low carb biscuit and loaf bread recipes

I kind of crashed the bread machine thread down below so thought I ought to start a new thread in case someone later wants to search for these recipes at a later date. I really like both of these recipes and we eat them pretty regularly.

Low carb biscuit recipe

4 eggs
1/4 cup melted butter
4 tablespoon  (4oz ) cream cheese
1 teaspoon vinegar
1/2 teaspoon salt
3 teaspoons garlic powder (optional)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup coconut flour
1/2 cup shredded cheddar cheese

Melt butter and soften cream cheese in one bowl.
Add vinegar
Add one egg at a time and beat the egg into until well blended
In separate bowl mix the dry ingredients together except the cheese
Add wet ingredients into the dry - mix well
mix the cheese into the above mixture
Drop on parchment paper - should make about 8 biscuits
Bake at 400 degrees 15 minutes or till done

Low carb keto loaf bread

8 eggs room temperature
8 oz cream cheese softened
4 tablespoons butter soft
6 tablespoons coconut flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon vinegar
1 teaspoon salt

Add vinegar to eggs and beat till smooth
add cream cheese and butter and mix till smooth
(can do all of the above in blender is easier)
add dry ingredients and mix till consistent
pour into parchment lined loaf pan or silicone loaf pan
bake at 350 for 45 minutes or till done

If you want the above like a flatbread bake on a sheet pan (parchment lined or silicone) and you can add garlic powder and Italian seasoning to go with something like lasagna. Slice into strips. (wife also has a low carb lasagna noodle recipe which is very good).

My wife Carolynn loves to cook and I eat really well!  :-
